Fresh Pea Puree

How about adding some color to your plate? Fresh pea puree with rocket and lemon from Spoonsparrow is delicious with vegetables, fish or meat.

Ingredients

  • 1 small clove of garlic
  • 1 small onion
  • 1 Organic lemon
  • 1 tbsp Olive Oil
  • 250 g Peas (frozen)
  • 4 tbsp soy cream
  • Salt
  • Pepper
  • 1 box garden rocket

Instructions

    Peel and finely chop the garlic and onion.

  2. 2.

    Wash the lemon, dry it, grate the zest finely. Cut the lemon in half and squeeze one half for juice (use the other half elsewhere).

    Heat oil in a pan. Sauté the garlic and onions over medium heat until translucent. Add frozen peas and sauté for 1 minute.

    Add 2 tbsp water, 1 tbsp lemon juice and the lemon zest; cook for 1–2 minutes.

    Pour in soy cream and bring to a brief boil.

  6. 6.

    Transfer everything to a tall vessel and blend with an immersion blender until smooth. Season with salt and pepper.

    Cut rocket from the garden with kitchen scissors, sprinkle over the pea puree and serve.
