Ingredients

  • 350 g fresh mushrooms (e.g., brown caps)
  • 1 onion
  • 3 tbsp Rapeseed oil
  • Salt
  • Pepper (freshly ground)
  • 10 eggs
  • 100 ml whipping cream
  • 2 tbsp freshly chopped thyme

    Clean the mushrooms and slice them thinly. Peel and dice the onion. Heat 1 tbsp rapeseed oil in a pan and sauté the mushrooms with the diced onions until lightly browned. Season with salt and pepper, then set aside.

    Whisk the eggs with the cream and season with salt and pepper. Add a little oil to a hot non-stick skillet, pour in one quarter of the egg mixture, cook for about 1 minute, then sprinkle with thyme. Cover and let it set completely into an omelette for 1-2 minutes. Repeat to make four omelettes, top each with mushrooms, and serve.
