Shrimp Omelette

Ingredients
- 75 g flour
- 100 ml milk
- 4 eggs
- Salt
- Nutmeg (freshly grated)
- vegetable oil (for frying)
- 100 g peas (frozen)
- Salt
- 100 g cocktail shrimp (pre-cooked)
- 2 tbsp freshly chopped parsley
Instructions

Whisk the flour with the milk until smooth and fold in the eggs. Season with salt and nutmeg and let rest for about 10 minutes.

Meanwhile, cook the peas in salted water for 2 minutes and drain.

Pour half of the batter into a hot, greased pan with 1-2 tbsp oil and sprinkle with half the peas, shrimp, and parsley. Cook slowly until golden brown for 2-3 minutes, then roll up and let cool slightly. Repeat with the second omelette. Slice each into six pieces before serving.
