A creamy and delicious dream from Spoonsparrow – a French potato gratin that is both comforting and flavorful.

Ingredients

  • 800 g waxy potatoes
  • 400 ml whipping cream
  • 1 Garlic clove
  • 2 spring onions (white part only)
  • 2 tbsp crème fraîche
  • Salt
  • crushed pepper
  • freshly grated nutmeg
  • 50 g shredded cheese (e.g., Gruyère, Emmental)

Instructions

  1. 1.

Peel the garlic clove and rub it into the baking dish.

  2. 2.

Wash, trim, and slice the spring onions into rings.

  3. 3.

Wash, peel, and thinly slice or shave the potatoes. Layer them evenly in a criss‑cross pattern in the dish. Mix cream, cheese, spring onions, and crème fraîche; season with salt and nutmeg, then pour over the potatoes so they are just covered. Adjust the amount of cream if needed.

  4. 4.

Bake in a preheated oven at 180 °C (under/over heat) for about 35–45 minutes until golden brown. Test doneness by inserting a fork – it should slide in easily. During the last 10 minutes, switch on the grill and crisp the top layer. Sprinkle with freshly crushed pepper before serving.
