- 4 large potatoes
- 250 g sour cream (or crème fraîche)
- 4 Spring Onions
- Salt
- Pepper (freshly ground)
- olive oil
- 2 Tomatoes

Wash the potatoes, wrap them in aluminum foil and bake in a hot oven at 200°C for about 50-60 minutes. Wash the tomatoes, halve them, remove seeds and dice into small cubes. Wash the spring onions, trim and finely chop.

After baking, slightly unwrap the potatoes (keep them in the foil), cut lengthwise, add the sour cream, sprinkle with tomatoes and spring onions, drizzle each with 1 tablespoon of olive oil, season with salt and pepper, and serve immediately.
