Blanched Peas

Ingredients

  • 800 g fresh young pea pods
  • 400 g yogurt (3.5% fat)
  • Salt
  • Pepper (freshly ground)
  • 2 tsp grated lemon zest (organic lemon)
  • 1 tbsp Olive Oil

Instructions

    Wash the fresh peas and remove them from their shells. Blanch in boiling salted water for 2 minutes, then drain well. Arrange the peas on a plate. Mix yogurt with salt, pepper, olive oil, and lemon zest; drizzle over the peas. Garnish with fresh herbs before serving.

    If the peas are still very tender and freshly picked, they can also be eaten raw with the yogurt sauce.
