Foil Paella

Ingredients

  • 150 g peas (frozen)
  • 1 packet saffron
  • 1 tsp Paprika powder (sweet)
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp olive oil
  • 100 g black olives (pitted)
  • 2 tbsp chopped parsley
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 125 g shrimp (frozen, ready to cook)
  • 2 chicken breast fillets
  • 400 g cod fillet
  • Salt
  • Pepper

Instructions

    Thaw the peas. Cut the fish and chicken into bite‑size pieces.

    Thaw the shrimp and drain well.

  3. 3.

    Preheat the oven to 200°C.

    Wash the peppers, remove seeds and membranes, slice into strips. Mix vegetables with fish, chicken, olive oil, olives and parsley in a bowl and season with lemon juice, salt, pepper, paprika and saffron.

    Cut four foil strips, fold them twice and place one quarter of the mixture on each strip, then seal into packets.

    Place on an oven rack and bake at medium height for 30 minutes.
