Foam Omelette with Strawberries

Ingredients
- 250 g strawberries
- 1 tbsp strawberry syrup (alternatively 1 tbsp orange liqueur)
- 4 eggs
- a pinch of salt
- 90 g sugar
- 40 g flour
- 2 tbsp butter
- mint

Wash, trim and slice the strawberries, then mix with the syrup and cover to let sit. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form, allowing 50 g of sugar to fall in gradually. Mix the yolks with the remaining sugar, then fold into the whipped whites with a wooden spoon. Finally, fold in the flour.

Melt 1 tsp butter in a pan and cook each omelette (about 1/4 of the batter) over low heat for about 2-3 minutes. Slide the cooked omelettes onto warmed plates, spread strawberries on one half, fold the other half over. Dust with powdered sugar and garnish with mint leaves before serving.
