Poke Cake
A stylish strawberry poke cake
Ingredients
- 125 g soft butter
- 100 g sugar
- 200 g Flour
- 1 tsp Baking powder
- a pinch salt
- 2 Eggs
- 70 ml milk
- 2 sheets gelatin
- 160 g strawberries
- 40 ml strawberry syrup
- 400 ml whipping cream
- 40 g powdered sugar
- 1 splash Lemon juice
- strawberries (for garnish)
Instructions

Preheat the oven to 200°C with fan and bake top and bottom, line a baking tray with parchment paper.

Cream the butter with sugar. Mix flour with baking powder and salt. Add to the butter mixture, gradually stirring in. Beat eggs alternately with milk until a smooth batter forms. Spread the batter on the tray and level it out. Bake for about 25 minutes, then let cool.

Soak gelatin sheets in cold water. Rinse strawberries, pat dry, and cut into small pieces. Blend with strawberry syrup and 100 ml water until smooth. Transfer to a saucepan. Squeeze out excess liquid from gelatin and dissolve in the strawberry sauce over low heat. Poke holes about every 2 cm in the cake base with a wooden skewer. Spread the strawberry sauce over the cake base and smooth it out. Chill the cake in the refrigerator.

Whip cream until soft peaks form, gradually adding powdered sugar and lemon juice. Spread the whipped cream loosely over the cake.

Slice strawberries into rounds and use them to garnish the cake slices.
