Ingredients
- 100 ml milk
- 0.5 Vanilla bean
- 3 egg yolks
- 50 g sugar
- 100 ml strawberry syrup
- 2 drops rose oil
- 500 ml whipping cream
- 4 organic rose petals
- 1 tbsp coarse sugar
Instructions

Split the vanilla bean lengthwise, scrape out the seeds and heat with the milk. Beat the egg yolks and sugar until creamy. Remove the vanilla from the milk and stir the hot milk into the egg mixture. Whisk over a bain-marie to a creamy consistency. Let it cool while stirring, then fold in the rose oil drops and strawberry syrup. Whip the cream stiff and fold it in. Freeze the mixture for 2 hours in the freezer, stirring occasionally.

Moisten the rose petals and roll them in sugar.
