Ingredients

  • 2 shallots
  • 6 Eggs
  • Salt
  • Pepper (freshly ground)
  • 8 tbsp crème fraîche
  • 3 tsp mustard
  • 2 tsp lemon juice
  • 2 tbsp finely chopped basil
  • 3 tbsp butter
  • 4 slices smoked salmon (ca. 100 g)
  • basil (for garnish)

    Peel and finely chop the shallot. Separate the eggs; beat the whites with a pinch of salt until stiff peaks form. Whisk the yolks with 4 tbsp crème fraîche, mustard, and lemon juice. Season with salt and pepper, then gently fold in the meringue. Melt half the butter in a non‑stick pan. Sauté half the shallot until translucent. Add one quarter of the omelette mixture and cook for 6–8 minutes until the underside is golden brown and the surface begins to set. Flip and cook another 2 minutes, then remove from heat.

    Spread 1 tbsp crème fraîche on each omelette and top with basil and smoked salmon. Season with salt and pepper, then fold the omelette together using a spatula. Repeat for the remaining omelettes. Plate the omelettes and garnish with fresh basil before serving.
