Currant Jam

Ingredients
- 750 g black currants
- 750 g red currants
- 500 ml water
- 800 g fruit preserve sugar (2:1)

Wash the currants, drain well, and strip stems. Place the currants with 500 ml water in a pot and simmer for 15 minutes until all berries burst. Line a large sieve with a damp muslin cloth and set over a large pot. Pour the berry mash through, letting it strain. Use the cloth to press out remaining juice and allow the liquid to cool completely.

Measure about 1.3-1.5 liters of the cooled juice and mix in the fruit preserve sugar. In a large pot, bring to a vigorous boil over high heat while stirring continuously. Boil for 4-6 minutes until it bubbles vigorously, continuing to stir.

Remove the pot from the stove and fill jars that have been hot-washed with the jam, sealing immediately with lids.

If any juice remains, pour into glasses or bowls, garnish with fresh berries, and serve at breakfast.
