Ingredients

  • 100 g blueberries
  • 2 ripe peaches
  • 1 tbsp honey
  • 40 ml orange liqueur
  • 4 eggs
  • Salt
  • 1 tsp grated lemon zest
  • 40 g sugar
  • 75 g flour
  • 3 tbsp milk
  • butter (for frying)
  • powdered sugar (for dusting)

Instructions

    Wash the berries, rinse and pat dry. Rinse peaches, halve, remove pit and cut flesh into strips. Mix with honey and orange liqueur and let sit.

    For the omelette separate eggs and beat egg whites with a pinch of salt until very stiff. Beat yolks with lemon zest, sugar, flour and milk and fold in beaten whites. Melt some butter in a hot pan and cook 4 omelettes one after another. Pour 1/4 of the mixture into the pan (use two pans if needed) and bake at low heat until golden brown. Let set as desired and do not flip.

    Place on plate, top with berries and peaches, fold slightly together and serve dusted with powdered sugar.
