Summer Berries with Vanilla Sauce

- 600 g mixed berries (strawberries, currants, raspberries, blackberries, blueberries)
- 1 egg (separated)
- 1 tbsp sugar
- 1 tbsp Cornstarch
- 250 ml milk
- 1 Vanilla bean
- 500 g fresh cherries
- mint

Wash the berries, discard stems and cut larger strawberries into quarters. For the vanilla sauce whisk the yolk with sugar, cornstarch and about 50 ml milk. Split the vanilla bean, add the remaining milk to a pot and bring to a boil. Remove from heat, cover and let steep for about 10 minutes, then remove the bean.

Whisk in the prepared yolk mixture, return the pot to the stove and gently heat while stirring (do not boil) until the sauce thickens. Let the vanilla sauce cool slightly. Beat the egg white stiffly and fold it into the sauce gradually. Mix the fruit, combine with the vanilla sauce, serve in bowls garnished with mint leaves.
