Millet Pudding with Fruit Sauce

Ingredients
- 500 ml milk
- 100 g Millet
- 4 tbsp Honey
- 2 egg yolks
- 2 untreated oranges
- 4 Apricots
- 1 tbsp honey

Bring the milk to a boil. Add the honey and millet, stirring constantly, and let it simmer for about 20 minutes until the millet is cooked. Remove from heat and stir in the egg yolks. Then pour the pudding into star-shaped molds that have been rinsed with cold water. Let cool and refrigerate for at least 2 hours to set.

For the sauce, zest one orange. Squeeze out the juice of both oranges. Briefly steep the apricots in hot water, then shock them, peel, halve, and pit them. Dice the fruit flesh finely and combine with the orange juice and honey; bring to a boil. Simmer for 2-3 minutes, then remove from heat and let cool.

To serve, lift each pudding out of its mold and pour the sauce around it. Garnish with orange zest before serving.
