Floating Rum Pot

Ingredients

  • 900 ml white rum
  • 500 g sugar
  • 3 kiwis
  • 1 mango (ca. 200 g)
  • 250 g untreated kumquat
  • 1 untreated lime
  • 250 g pineapple (canned)
  • 250 g peaches (canned)
  • 3 fresh figs
  • 2 pink grapefruits
  • 200 g raspberries (frozen substitute)

Instructions

    Heat 200 ml water and 200 ml of the rum with the sugar, bring to a brief boil. Peel the kiwis and mango; slice the kiwi into rounds and cut the mango into wedges. Wash the kumquats and lime hot, slice the lime thinly, halve the kumquats. Drain the pineapple and peaches, catch the juice from the can, and cut the fruits into wedges. Wash the figs and also cut them into wedges. Peel the grapefruit, divide it into wedges, and with a sharp knife remove the peels. Wash the raspberries.

    Mix all the fruits together and layer them in a suitable glass that has been rinsed hot. Mix the rum syrup with the remaining rum, stir in 3 tbsp pineapple juice and 3 tbsp peach juice, then pour over the fruits so they are covered. Stir well and let steep at least 8 days in a cool, dark place before serving.
