Ingredients
- 2 handfuls sage
- 1 egg
- 125 g flour
- 150 ml dry white wine
- 1 pinch salt
- 1 box watercress
- vegetable oil (for frying)

Rinse the sage, pat dry and remove leaves.

Separate the egg. Whisk the flour with the yolk, wine and salt until smooth. Let rest for about 10 minutes.

Beat the egg white to stiff peaks and fold into the batter.

Use tweezers to thread sage leaves through the batter and fry in hot oil (≈170 °C) in a tall pan for about 1 minute until golden brown.

Drain on paper towels and serve garnished with sage blossoms.
