Ingredients

  • 2.5 l good vinegar (as desired)
  • 1 sprig bay leaf
  • 0.5 head of garlic
  • 2 sprigs tarragon
  • 4 small chili peppers
  • 3 sprigs thyme
  • 1 bunch sage leaves
  • 1 stalk rosemary

Instructions

    Add the bay leaf to one bottle, add peeled garlic cloves and tarragon to a second bottle.

    Fill a third bottle with chili peppers (score them first) and thyme.

  3. 3.

    Add sage to a fourth bottle and rosemary to a fifth bottle.

  4. 4.

    Pour 500 ml vinegar into each bottle, ensuring all ingredients are covered by vinegar.

    Seal tightly and let steep in a dark place for 2-4 weeks.

    Strain as desired or leave the ingredients in the vinegar.
