- 4 cod fillets (about 180 g)
- 3 tbsp olive oil
- 250 g Cherry Tomatoes
- 200 g mozzarella
- 1 tbsp Lemon Juice
- Salt
- Pepper
- 2 sprigs Basil
- 2 Tbsp grated Parmesan

Preheat the oven to 200°C fan.

Rinse the cod and pat dry. Place on a greased baking tray. Wash and halve the tomatoes. Dice the mozzarella. Distribute the tomatoes over the fish and drizzle with remaining oil and lemon juice. Season with salt and pepper. Rinse the basil, pluck leaves, sprinkle over, and finally add parmesan on top. Bake in the oven for 15-20 minutes.
