Fish Sticks with Egg

Ingredients
- 800 g starchy potatoes
- Salt
- 12 fish sticks
- 600 g spinach leaves
- 1 onion
- 1 Garlic clove
- 3 tbsp butter
- 3 tbsp heavy cream
- pepper (ground)
- nutmeg
- 200 ml milk
- 4 eggs
- 1 tbsp Vegetable oil
Instructions

Wash, peel, and dice the potatoes; boil in salted water for about 20 minutes.

Preheat the oven to 170°C (338°F) with both top and bottom heat.

Place the fish sticks on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown, turning once.

Wash the spinach thoroughly and remove tough stems. Peel and finely dice the onion and garlic. Sauté in 1 tbsp hot butter until translucent. Add the spinach and cook until wilted. Pour in the cream and season the mixture with salt, pepper, and nutmeg.

Drain the potatoes and mash them using a potato masher into another pot. Warm the milk with the remaining butter and fold it into the mash. Season with salt and nutmeg to taste.

Heat the oil in a skillet and crack the eggs into it. Fry for 2-3 minutes until the whites are set but yolks remain runny.

Arrange the mashed potatoes, spinach mixture, and fish sticks on plates; top each with an egg. Sprinkle with pepper, lightly season with salt, and serve immediately.
