Fish Chives Balls

Ingredients
- 150 g smoked trout fillet
- 150 g cream cheese
- 1 tsp horseradish (from jar)
- Salt
- Pepper
- 0.5 tsp lemon zest (very fine)
- 0.25 red bell pepper
- 2 bunches chives
- 20 basil leaves (or other herbs or lime leaves)
Instructions

Wash the chives, set aside a few stems for garnish, and finely roll the rest into small ribbons.

Clean the bell pepper and dice it very finely. Finely chop half of the lemon zest and mix with pepper, cream cheese, and horseradish to make a creamy mixture.

Break apart the smoked trout, remove bones, and tear or cut the fish flesh into small pieces. Stir into the cheese mixture and season to taste.

With damp hands roll about 20 small balls from the mixture and coat them in chive ribbons.

For serving place each ball on a herb or lime leaf and sprinkle with remaining zest. Garnish with chive stems.
