Fish and Seafood Gratin Wrapped in Dough

Ingredients
- 500 g cod fillet (ready to cook, skinless)
- 200 g shrimp (peeled and deveined)
- 2 shallots
- 1 Garlic clove
- 100 g mushrooms
- 1 Zucchini
- 2 Tomatoes
- 2 tbsp olive oil
- 100 ml dry white wine
- 200 ml fish stock
- 1 tbsp Cornstarch
- 2 tbsp freshly chopped parsley
- Salt
- ground pepper
- 250 g flour
- 3 tsp baking powder
- 0.5 tsp Salt
- 50 g soft butter
- 150 ml milk
- 75 g freshly grated cheese (e.g., Gouda)

Preheat the oven to 200°C (400°F) with upper and lower heat. Wash the fish, pat dry, and cube it. Rinse the shrimp and pat dry as well. Peel and finely chop the shallots and garlic. Clean and cube the mushrooms. Wash, peel, and cube the zucchini. Wash, quarter, seed, and dice the tomatoes. Sauté the shallots with garlic in hot oil, then add mushrooms, zucchini, and tomatoes; deglaze with white wine and fish stock. Bring to a boil, thicken with cornstarch mixed in cold water until the sauce is creamy.

Remove from heat, stir in parsley, fish, and shrimp, season with salt and pepper, and transfer to an ovenproof dish. For the dough, combine flour, baking powder, salt, butter, and enough milk to knead into a smooth, non-sticky dough. Roll out on a floured surface to about 1.5 cm thickness, cut circles of roughly 3 cm diameter. Brush with milk and place over the filling. Sprinkle cheese on top and bake in the preheated oven for about 30 minutes until golden brown.
