Delicate leafy salad with Bündner meat: a light starter for the festive menu. Bündner meat is rightly considered a delicacy and contains less than 5% fat.
Ingredients
- 120 g small frisée lettuce (1 small frisée lettuce)
- 250 g Lollo bionda (1 Lollo bionda)
- 2 tbsp Apple cider vinegar
- 2 tsp sweet mustard
- 2 tbsp Mediterranean vegetable broth
- 3 tbsp Rapeseed oil
- Salt
- Pepper
- 1 bunch chives
- 60 g Bündner meat (thinly sliced)
Instructions

Clean, wash, and dry the frisée and Lollo bionda, then cut into bite-sized pieces. Place in a large bowl.

Whisk together vinegar, mustard, vegetable broth, and rapeseed oil with a whisk in a small bowl to make the dressing. Season with salt and pepper.

Wash and dry the chives, cut into rings, and add them to the dressing. Pour the dressing over the salad and mix well.

Arrange the Bündner meat slices on flat plates in a circular pattern like carpaccio.

Distribute the salad over the meat slices and serve.
