Carrot Apple Salad
A fresh carrot apple salad featuring crisp vegetables and a creamy yogurt dressing. Try this recipe and many others from Spoonsparrow!
Ingredients
- 4 tbsp sunflower seeds
- 500 g carrots
- 2 large tart apples
- 2 tbsp lemon juice
- 50 g sprouts (alfalfa or radish sprouts)
- large salad leaves
- 100 g Greek yogurt (10% fat)
- 2 tsp medium mustard
- 1 tsp curry powder
- Salt
- Pepper

Roast the sunflower seeds in a small pan over low heat without oil until golden brown, then remove from heat and let cool.

Peel and roughly grate the carrots. Peel, quarter, core, and also grate the apples. Mix the grated fruit with lemon juice to prevent browning.

Whisk together yogurt, mustard, and curry powder for the dressing; season with salt and pepper. Fold in the carrot and apple grates and allow the salad to marinate for 30 minutes.

Rinse the sprouts under cold water in a sieve and drain well. Toss the salad again and adjust seasoning. Wash, dry, and pat the salad leaves, then arrange them on four bowls. Top with the seasoned mixture and garnish with roasted sunflower seeds and sprouts.
