Filoteig-Feta-Rolls

Spoonsparrow filo dough feta rolls are always a hit.

Ingredients

  • 350 g filo dough
  • 600 g feta (from sheep milk)
  • 1 handful mint
  • 1 handful basil
  • 2 tsp organic lemon zest
  • 2 tbsp olive oil
  • Salt
  • freshly ground pepper
  • Vegetable oil for frying

Instructions

    Drain the cheese and finely chop. Chop mint and basil leaves with a paring knife. Mix feta, herbs, lemon zest, olive oil, salt and pepper. Season lightly, as the feta is already quite salty.

    Cut the filo dough into 12 squares about 15x15 cm each. Place a spoonful of filling on each square, brush edges with water and fold inwards. Roll either crosswise or towards the tip, pressing edges firmly so the rolls stay closed when fried.
