Filo Tartlets with Peas

Ingredients
- 500 g peas
- Salt
- 2 Spring Onions
- 2 Garlic cloves
- 250 g cream cheese
- 4 eggs
- 300 ml whipping cream
- 80 g freshly grated Parmesan
- Pepper
- nutmeg
- 300 g filo pastry
- 5 tbsp olive oil
- mixed herbs (for garnish)

Blanch the peas in salted water for 1-2 minutes. Shock and drain well. Peel and finely chop the garlic cloves. Whisk the cream cheese with the eggs, cream and Parmesan until smooth. Stir in the garlic and season with salt, pepper and nutmeg.

Preheat the oven to 180°C fan.

Lay out the filo pastry and cut into about 24 equal squares. Grease 12 muffin tins (or other small baking molds) with oil. Place one filo square in each tin, press down and brush with oil. Lay a second sheet slightly offset on top and oil it as well. Spread the cream cheese mixture in the cups and add peas on top. Bake for about 25 minutes. Serve warm or chilled, garnished with herbs if desired.
