Filo Pie with Spinach and Cheese

Ingredients
- 300 g feta
- 1 bunch parsley
- 1 onion
- 500 g spinach
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 125 g butter
- 1 egg
- 125 ml milk
- butter (for the pan)
- 1 pack filo dough sheets (500 g)
- 5 tbsp pine nuts

Crumb the sheep cheese finely. Finely chop the parsley and peeled onion, preferably with a paring knife. Rinse and wash the spinach, place it in a pot when very wet and let it collapse under high heat, then drain, squeeze out excess water and cool. Thoroughly press the spinach, roughly chop, mix with the cheese, onion and parsley, and season with salt, pepper and nutmeg.

Melt the butter without browning it. Whisk the egg and stir in the milk, then pour the warm liquid fat over it and mix together.

Grease a rectangular ovenproof dish (about 20 x 30 cm). Lay one third of the dough sheets on top of each other in the dish, brush each sheet with the egg mixture and spread the spinach on top. Cover with the remaining dough sheets, brushing each sheet again.

Cut the casserole in the dish into portions with a knife and sprinkle with pine nuts. Place it in a cold oven (lower rack) and bake at 200 °C for about 35 minutes. Serve warm or cold.
