    Cut off the top and bottom of the orange with a small, sharp kitchen knife.

    Remove the skin along with the white pith thoroughly.

    Slice along the segments from above to the middle using the knife.

    Turn the knife and cut each fillet along the other segment lines toward the top.

    Place the fillets in a bowl and squeeze the juice of the filleted orange as needed for your use.
