Filled Yorkshire Pudding

Ingredients

  • 200 g frozen spinach
  • 150 g Parmesan
  • 200 g ricotta
  • 200 g Flour
  • 175 ml milk
  • 2 Eggs
  • 100 ml water
  • Salt
  • oil (for the pan)
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Let the spinach thaw, squeeze out excess liquid and roughly chop. Grate the parmesan and mix with ricotta and spinach. Season with salt, pepper and nutmeg.

    Preheat the oven to 200°C. Pour a teaspoon of oil into each cavity of a muffin tin and let it heat up in the oven. In the meantime whisk flour, milk, eggs, water and a pinch of salt. Remove the tin from the oven, pour the batter into the cavities and bake for about 10 minutes until golden brown. Then remove from the oven, press down, add the spinach filling to each cavity and return to the oven for another 4–5 minutes. Finally release from the tin and serve.
