Filled Marzipan Cookies

The filled marzipan cookies of Spoonsparrow combine the delicate flavor of marzipan with a harmonious blend of Christmas spices.

Ingredients

  • 125 g honey
  • 75 g cane sugar
  • 50 g butter
  • 2 Eggs
  • 250 g flour
  • 2 tsp Baking powder
  • 2 tsp gingerbread spice
  • flour (for working)
  • 400 g marzipan raw mass
  • colorful sugar lettering (for decoration)

Instructions

    Warm honey, cane sugar and butter in a saucepan over medium heat. Stir until the sugar has completely dissolved and let cool. Beat in egg. Mix flour with baking powder and gingerbread spice, sift over mixture and knead. Adjust flour amount slightly if needed so dough no longer sticks. Wrap in plastic wrap and chill for about 1 hour.

    Preheat oven to 180°C (160°C fan; gas: level 2–3).

    Roll dough on floured surface to a thickness of 3 mm. Shape marzipan mass into a roll about 1 cm thick. Cut dough so that the marzipan roll is fully enclosed. Separate remaining egg white. Brush edges with egg white and press dough together.

    Cut finished roll diagonally into triangles. Brush with egg yolk, place on parchment-lined baking sheet and bake in oven for 15–20 minutes until golden brown. Remove from tray and cool. Decorate filled marzipan cookies with colorful sugar lettering as desired.
