Almond Cookies

Ingredients

  • 2 egg whites
  • 150 g powdered sugar
  • 150 g marzipan base
  • 40 ml rum
  • 200 g finely ground almonds (peeled)
  • 100 g whole peeled almonds
  • egg white (for brushing)
  • 30 whole peeled almonds (halved)

Instructions

    Beat the egg whites with the sugar until stiff peaks form. Mix the marzipan with the rum until smooth, then fold in the ground almonds and the beaten egg whites to create a pliable dough. Cover and chill for at least 30 minutes.

    Preheat the oven to 160 °C fan-assisted.

    Shape small balls from the dough, flatten them, and press a halved almond onto each. Place on parchment-lined baking sheet and bake for about 15 minutes until light yellow. Remove, cool, and dust with powdered sugar before serving.
