Ingredients

  • 2 onions
  • 0.5 tsp black peppercorns (crushed)
  • 2 fillets (200 g each)
  • 2 tbsp oil
  • 2 tbsp butter
  • 100 ml red wine
  • Salt

Instructions

    Preheat the oven to 100°C with top and bottom heat.

    Peel, halve, and slice the onions into strips.

    Pat the steaks dry and sear them in a hot pan with oil for about 2 minutes on each side. Remove, season with salt and pepper, and finish cooking in the oven on the middle rack. The exact time depends on desired doneness and thickness of the meat.

    Add 1 tbsp butter to the skillet and sauté the onions. Deglaze with red wine and reduce slightly. Remove from heat and stir in 1 tbsp cold butter. Season with salt and pepper, then pour over the steaks.
