Filetsteaks with Vegetables
The filet steaks with vegetables from Spoonsparrow provide long-lasting satiety and boast plenty of protein.
Ingredients
- 1 Garlic clove
- 2 tbsp Soy sauce
- 2 tbsp Orange juice
- Salt
- Pepper (freshly ground)
- 2 slices beef fillet (about 150 g each)
- 4 small potatoes
- 200 g broccoli
- 2 carrots
- 1 Tbsp clarified butter
- 2 tbsp butter
- 1 tbsp chopped parsley
Instructions

Peel the garlic and press it through a garlic press. Mix with soy sauce, orange juice, and ½ tsp pepper. Marinate the meat in this mixture for about 20 minutes, turning once.

Peel the potatoes and cut them lengthwise into quarters. Toss the quarters as desired and cook them in salted water until tender.

Wash the broccoli and separate into florets; peel the stems and cut into sticks. Peel the carrots and slice diagonally. Blanch both in boiling salted water for about 4 minutes, then shock in ice water.

Heat clarified butter in a pan. Remove the meat from the marinade, pat it dry, then sear each side for 2–4 minutes (to taste). Set aside.

Add the remaining marinade and about 100 ml water to the pan with the drippings and bring to a quick boil; season to taste.

Drain the potatoes.

Turn the remaining vegetables in hot butter, heat through, and season with salt and pepper.

Plate the potatoes and vegetables, add the meat and some sauce, and serve the filet steaks with vegetables.
