Ingredients
- 4 beef filet steaks (200 g each, about 4 cm thick)
- Salt
- freshly ground pepper
- 2 tbsp peanut oil
- 4 tbsp whisky
- 30 g Butter
- 150 ml Heavy Cream
- 125 g crème fraîche
- a few dashes Worcestershire sauce
- a few dashes lemon juice
- herbs and lemon slices for garnish (optional)

Season steaks with salt and pepper. Heat peanut oil in a pan. Sear steaks 2 minutes per side. Reduce heat and cook for an additional 6-8 minutes, turning occasionally. Remove steaks from the pan and wrap in foil. Let rest for 5 minutes.

Deglaze the pan with whisky. Stir in butter, cream, and crème fraîche. Simmer for 3-5 minutes. Season with Worcestershire sauce, lemon juice, salt, and pepper. Take steaks out of the foil and stir the released juices into the sauce. Plate steaks with the sauce and garnish with herbs and lemon slices if desired.
