Ingredients
- 12 fresh ripe figs
- 12 tsp goat cream cheese
- 2 bunches arugula
- 4 tbsp pine nuts
- 5 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1 tsp Honey
- Salt
- black pepper (freshly ground)
- chives (for garnish)
Instructions

Wash the figs, pat dry and cut them lengthwise into two halves without cutting all the way through. Gently press the figs apart and add a teaspoon of cream cheese to each half. Wash, trim, rinse, spin dry the arugula and remove any tough stems.

Toast the pine nuts in a pan until fragrant. Arrange the arugula and toasted pine nuts on plates and place the fig halves on top. Mix all vinaigrette ingredients together, drizzle over the salad, and serve garnished with chives.
