Ingredients
- 4 bulbs fennel
- 50 g walnut kernels
- walnut oil
- white balsamic vinegar
- Salt
- Pepper (freshly ground)

Clean the fennel and cut into thick slivers, setting aside some of the greens. Blanch the fennel slivers in boiling salted water for 3-4 minutes. Drain, reserving one cup of the blanching liquid, and let cool. Roughly chop the walnut kernels.

Mix 4 tbsp walnut oil with 3 tbsp vinegar, the walnuts, and 3-4 tbsp of the reserved blanching liquid. Season with salt and pepper. Drizzle the vinaigrette over the fennel. Finely chop the fennel greens, sprinkle on top, and serve.
