Fig Walnut Cake

Ingredients
- 12 figs
- 100 g raisins
- 40 ml rum
- 8 eggs
- 200 g sugar
- 150 g flour
- 50 g starch
- 2 tbsp cocoa powder
- 0.5 tsp cinnamon
- 100 g walnuts
- 150 g sugar
- 4 tbsp Lemon juice
- 4 figs
- raspberries
- whipped cream
Instructions

Cut figs into small cubes. Soak raisins in rum.

Separate eggs. Beat yolks with 1 tbsp warm water until light and fluffy, then add sugar. Whisk egg whites stiffly and fold into mixture. Combine flour, starch, cocoa powder, and cinnamon; gradually stir into batter. Briefly puree figs with raisins using a hand blender, then fold in walnuts.

Line a springform pan with parchment paper, pour batter, smooth top, and bake at 180°C for about 45 minutes. Remove, let cool slightly, take out of pan, remove parchment, and cool on a rack.

Boil sugar with lemon juice and 150 ml water, simmer for about 1 minute. Add figs, bring to boil, then remove from heat and cool.

Serve by cutting cake into pieces. Remove figs from syrup, quarter them. Arrange cake with fig syrup and fig quarters on plate; garnish with raspberries and whipped cream as desired.
