Apple Cake with Almond Flakes

The apple cake with almond flakes from Spoonsparrow is always a hit!

Ingredients

  • 250 g spelt whole‑grain flour
  • 1 pinch salt
  • 100 g raw cane sugar
  • 0.5 tsp vanilla powder
  • 120 g butter
  • 1 egg
  • 40 g ground almonds
  • 1250 g apples
  • 100 ml apple juice
  • 2 tbsp raisins
  • 60 g almond flakes

    Sift the flour onto a work surface, mix with salt, 40 g raw cane sugar and vanilla powder, then press a well in the center. Cut the cold butter into small pieces and distribute around the well; add the egg to the center. Use a knife to cut through all ingredients, creating small dough crumbs, then quickly knead by hand (add more or less flour if needed) until a ball forms. Wrap it and chill for 30 minutes. Roll out the dough, line a springform pan, shaping a rim. Sprinkle ground almonds on the base.

    Peel, quarter, core, and slice the apples. In a pot caramelize the remaining raw cane sugar until golden, then deglaze with apple juice. Mix in apple slices, raisins, and half the almond flakes. Remove from heat, let cool slightly. Spread over the dough base with minimal liquid, distribute evenly. Sprinkle remaining almonds on top and bake in a preheated oven at 200 °C (180 °C fan) for about 40 minutes until golden brown. Let cool in the pan.
