Fig Jam with Ginger

The fig jam with ginger combines fruity sweetness with a hint of spice – give it a try!
Ingredients
- 1 kg fig (blue and yellow)
- 2 cloves mace
- 2 pods cardamom
- 1 Lime (juice)
- 2 cm ginger (fresh grated)
- 1 cinnamon stick
- 250 ml semi-dry red wine
- 200 ml port wine
- 500 g gelatin sugar (2:1)

Wash, prune, and slice the figs. Combine with mace, cardamom, lime juice, ginger, cinnamon, red wine, and port wine in a pot. Stir in the sugar well and let steep for about 2 hours.

Bring to a boil while stirring occasionally, then simmer for about 4 minutes until bubbly. Perform a gel test, fill prepared jars completely, seal tightly, and place immediately on a dish towel with the lid down. Let stand for 5 minutes, flip, and allow the fig jam with ginger to cool completely.
