The apple fruit spread from Spoonsparrow is perfect for the pantry and enhances any pastry!

Ingredients

  • 400 g apple peel and apple pulp leftovers (without seeds)
  • 100 g coconut palm sugar
  • 1 lemon (juice)
  • 0.5 tsp agar-agar

Instructions

    Wash apple peels and remnants, cut into small pieces, and place them with coconut palm sugar, lemon juice, and 50 ml water in a pot; bring to a boil.

    Simmer over low heat for about 20 minutes.

    Just before the mixture is done, purée it with an immersion blender. Stir in agar-agar and simmer for another 1–2 minutes.

    Pour the hot mixture into pre‑cooked clean jars, seal immediately, and place upside down for about 15 minutes. Then allow to cool. The spread will keep for 3–4 months.
