Ingredients
- 4 bulbs fennel (200 g each)
- 80 g thick-cut smoked bacon
- 2 onions
- 1 Garlic clove
- 4 tomatoes
- 1 tbsp Olive Oil
- 2 tsp thyme leaves
- 2 tbsp chopped parsley
- 1 bay leaf
- 2 tbsp lemon juice
- salt and pepper to taste

Wash, trim, halve fennel bulbs and cut into long strips. Peel and quarter the onion. Dice the bacon. Heat oil in a pan and gently sauté fennel over low heat; add onion, bacon, and bay leaf, browning everything for 5 minutes.

Peel garlic and press it in. Add tomatoes, blanch them, peel, quarter, and toss with thyme, parsley, and some chopped fennel greens into the pan. Cover and simmer for another 5 minutes. Season with salt, pepper, and lemon juice.
