Fennel and Zucchini Vegetable Mix

Ingredients

  • 6 bulbs fennel
  • 4 zucchinis
  • 3 tbsp olive oil
  • 1 tbsp anise seeds
  • 20 g butter
  • Salt
  • Pepper
  • star anise (for garnish)

Instructions

  1. 1.

    Clean the fennel, trim ends and finely chop. Wash the zucchini, trim ends and cut into 2 cm cubes.

    Heat 2 tbsp of oil, cover and sauté the fennel for 25 minutes until translucent.

  3. 3.

    In a second pan, heat the remaining oil and cook the zucchini cubes for 5 minutes. Add anise seeds and zucchini to the fennel and cook for another 10 minutes.

    Season with butter cubes, salt and pepper, and garnish with star anise.
