Fennel Salad with Salami and Citrus

A fresh fennel salad featuring sliced salami and citrus fruits, a vibrant vegetable salad from the Spoonsparrow collection!
Ingredients
- 2 bulbs fennel
- 75 g Italian salami (thinly sliced)
- 2 cloves garlic
- 2 untreated lemons
- 2 untreated oranges
- 1 tsp sharp mustard
- 1 tsp Honey
- Salt
- Pepper
- 3 tbsp olive oil

Wash the fennel, halve it, remove the core and fronds, then slice very thinly or julienne. Arrange with salami slices on plates. Peel and finely chop the garlic cloves. Slice one lemon and one orange; squeeze juice from the remaining two fruits. Mix the juice with garlic, mustard, honey, salt, and pepper.

Garnish the plates with orange and lemon slices, drizzle with dressing, and serve garnished with fennel fronds.
