Fennel Salad

Fresh, simple and tasty: The fennel salad from Spoonsparrow is always well received.

Ingredients

  • 600 g fennel
  • 1 stalk celery (with greens)
  • 3 tbsp Olive oil (30 g)
  • 2 tbsp white balsamic vinegar
  • 2 tbsp Orange juice
  • 2 tbsp freshly chopped parsley
  • 1 tbsp chives sprigs
  • Salt
  • Black pepper (from the grinder)

Instructions

    Wash and trim the fennel, cut off the core in a wedge shape, and shave into thin slices. Clean and wash the celery, set aside the greens, and slice finely.

    Place the fennel, celery, and celery greens in a bowl. Add oil, vinegar, orange juice, herbs, salt, and pepper. Mix well and let rest for about 20 minutes.

    Taste the salad again and serve in small bowls.
