Ingredients
- 4 baby fennel bulbs
- 2 Grapefruits
- 4 tbsp apple cider vinegar
- 1 tsp Honey
- 6 tbsp Olive oil
- Salt
- black pepper (freshly ground)

Rinse the fennel, trim it, and slice it thinly or shave it. Set aside some fennel fronds for garnish. Peel the grapefruits thoroughly and cut out the segments. Arrange the fennel slices and grapefruit segments on a bowl.

Whisk together the vinegar, honey, olive oil, salt, and pepper to make the dressing. Drizzle over the salad and serve garnished with fennel fronds.
