Ingredients
- 1 kg white asparagus
- Salt
- 1 slice untreated lemon
- 80 g freshly squeezed orange juice
- 1 tbsp freshly squeezed lime juice
- 1 finely chopped shallot
- 1 finely chopped garlic clove
- 0.5 untreated orange (zest)
- 1 chili pepper (peeled, sliced into thin rings)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 orange
- 1 tbsp lemon balm (thin strips)
Instructions

Peel the asparagus and trim the ends. Cook the asparagus in boiling salted water with the lemon slice for about 15 minutes. Remove and let cool.

Mix orange juice, lime juice, shallot, garlic, orange zest, and chili; let steep for about 10 minutes. Then whisk in the oil and vinegar.

Using a sharp knife, peel the orange thoroughly, removing the white pith. Cut fruit segments from the separating membranes.

Arrange asparagus with orange segments on a plate, drizzle with vinaigrette, and garnish with lemon balm.
