Ingredients
- 3 tbsp white wine vinegar
- 3 tbsp Lemon juice
- 1 tsp liquid honey
- 1 tbsp coarse mustard
- 0.5 tsp Salt
- 1 pinch pepper
- 4 tbsp cold-pressed olive oil
- 50 g arugula
- 2 bulbs fennel
- 0.5 small yellow bell pepper
- 1 red-fleshed apple
- 1 tsp butter
- 12 scallops (released, no coral)
- Sea salt

Whisk vinegar, lemon juice, honey, mustard, salt and pepper to make a dressing; finally whisk in the oil. Toss arugula with a paper towel to dry. Wash and trim fennel, slice lengthwise into very thin slices. Wash and trim bell pepper, cut into very fine strips. Wash, dry, quarter apples, remove core, and slice flesh with skin into very thin slivers. Marinate apple slivers immediately in dressing. Finally fold in fennel, pepper strips and arugula.

Heat butter in a pan. Pat scallops dry, quickly sear both sides in the pan. Lightly season with salt and pepper. Plate with salad in small bowls.
