Ingredients

  • 1 cucumber
  • 100 g radishes
  • 2 baby fennel bulbs
  • 100 g arugula (red and green)
  • 2 tbsp lemon juice
  • 2 tbsp Apple cider vinegar
  • 1 tsp liquid honey
  • 4 tbsp rapeseed oil
  • Fleur de sel
  • white pepper (freshly ground)

Instructions

    Wash, trim and thinly slice or shave the cucumber, radishes, and fennel. Wash, trim, and dry the arugula.

    Whisk together the lemon juice, vinegar, honey, and oil to make the dressing.

    Gently combine all prepared salad ingredients in shallow bowls or plates, drizzle with the dressing, season with Fleur de sel and pepper, and serve.
