Ingredients
- 1 cucumber
- 400 g cherry tomatoes
- 150 g arugula
- 2 Romaine Lettuce Hearts
- 1 handful fresh tarragon
- 0.5 tsp mustard seeds
- 1 tbsp Lemon Juice
- 3 tbsp white balsamic vinegar
- 3 tbsp Rapeseed oil
- a pinch sugar
- Salt
- Pepper

Wash, peel and slice the cucumber into about 1 cm thick rounds. Wash, peel and halve the tomatoes. Wash, peel, dry spin and tear the arugula and romaine lettuce into bite‑sized pieces. Rinse the tarragon and shake dry. Combine all salad ingredients in a large bowl.

For the dressing, crush the mustard seeds finely in a mortar. Whisk together with lemon juice, balsamic vinegar and rapeseed oil, then season with sugar, salt and pepper. Toss the dressing with the salad and serve on bowls.
