Baked Sweet Potatoes with Sheep Cheese

Baked sweet potatoes with sheep cheese from Spoonsparrow are always a delight.
Ingredients
- 1 kg sweet potatoes
- 4 cloves garlic
- 3 chili peppers
- 200 g sheep cheese (9% fat)
- 2 tbsp olive oil
- 1 tbsp honey
- 30 g pumpkin seeds (2 tbsp)
- 30 g Sunflower seeds (2 tbsp)
- 15 g sesame seeds (1 tbsp)
- coarse Sea salt

Peel, wash and cut the sweet potatoes into finger-thick sticks. Peel and slice the garlic cloves.

Halve, deseed, wash and chop or slice the chili peppers lengthwise. Cut the sheep cheese into cubes and mix with the sweet potatoes, garlic, chili, olive oil and honey. Spread on a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C (160 °C convection; Gas: level 2-3) for about 20-25 minutes.

Meanwhile, toast the pumpkin seeds, sunflower seeds and sesame seeds in a pan without fat over medium heat. Remove the sweet potatoes from the oven, arrange on plates and sprinkle with sea salt, seeds and sesame seeds.
